“Gluten Free” Good Eats!

I’m always looking for the simplest ways of doing things. It all comes from making things way too difficult in the past. I’m wanting to improve on things like decorating my home (little improvements that is) — wardrobe updates to what I usually wear — and the food my family eats, just to name a few things that I normally like to work on to, hopefully, make better.

I really don’t like having to be in the kitchen too long. I like simple recipes and simple food ideas — it’s the only way for me to go. Please, no recipes with long lists of ingredients. It’s just got to be simple — I’m on a quest to have a collection of simply good recipes and healthy menu choices. (I think you can see a repeated theme.)

Plus, the real reason is, I also have some allergic reactions to certain foods, specifically, the gluten in wheat — mainly bread.  It’s been hard staying on track at times. Waffling back and forth — wanting to eat right, but I was finding it rather challenging. It has turned into a condition where I have difficulty digesting foods with gluten (a protein) in certain grains and other foods. My main culprit is “wheat” — it’s in practically everything. Pizza — my favorite — is not really my friend (but I’m learning to make it friendlier.)

I’m not the only one, of course. A lot of people have the problem (celiac disease it’s called), but I’m learning that many don’t even know that they do. There’s no excuse, now, continuing to eat offending foods, when there’s so many good information resources and recipe choices out there. And I may even get to eat cute little cupcakes, too! Gluten-free that is.

I’m getting serious and starting to eat gluten free breads and other foods! What about you — do you have any issues with food?
